So we're not doing any witchcraft here ;)

I make elderberry jelly every summer, when the wild elderberries are ripe along the American River here in Sacramento. I even planted a bush at my parent's house so we will have a good supply no matter what. Isn't it delicious? So good for you too. Crazy thing is that they sell elderberry syrup here for about $20 for a small bottle, as a tonic to fight colds. Anyway, I always need to use pectin when I make it to get it to set. Even then, sometimes it doesn't like to set. I'm curious, are you able to get a firm jelly without adding pectin? (Big waves from California!)
