Bang! From one day to another it is summer. Just like that. No notice, so we’re still stuck with our winter wardrobe.
But I did find some time to cool our thirst with the first homemade lemonade this year, made from pink grapefruits and ginger. Refreshing, colorful and darn tasty. ‘Gotta have priorities!
Squeeze the grapefruits. Peel the ginger and slice it thinly.
Pour the grapefruit juice into a small saucepan, add the sugar and water as well as the sliced ginger. Bring to a boil and let simmer until sugar has completely dissolved, remove from heat and let stand for 10 to 15 minutes. Pour through a fine mesh sieve and refrigerate the strained syrup until thoroughly chilled.
To cut the sweetness, dilute with water and ice cubes to taste.

Homemade lemonade is my favorite thirst-quencher during summertime, I like it best plain with lemons or berries. I never used pink grapefruits, have to try it soon!
