Love the plugin, have been using it forever. Finally donated, though not very much :)
Had a question that's been nagging me: I have a form that sends me emails. In these emails, I want to hit the "reply" button (Gmail) and have it show that it was sent from the person. So if in the "email" field they put bob@bob.com, I want it to look like it came from that address so I just have to hit reply rather than reply then copy/paste their email.
Right now it shows an admin email.
I think I have this working on another site of mine but I have no idea how. Where's the option to set the sender email address = to their email address on the form?

By default cforms uses a REPLY-TO header so when you click Reply, your e-mail will be addressed to the e-mail address provided by the user who submitted the form.
If you must have a "user FROM: address" you can insert a {custom variable} referencing the from email field. However, this is not a good idea as some mail servers may deny delivery.
