I have found now that I have reached 4000 elements in my forms trackin database (all from one simple form) that the download function into .csv (or any other type) no longer works (it used to). Now it gives a 500 internal server error instead of a file to download.

4000 entries, quite impressive. What you're experiencing may be an issue with your web server, perhaps some form of limitation.
Not sure why and how, but the cforms tracking tables could easily store 100x that info, well depending on your DB space of course.
Can you filter the data and download parts of it?
I'll see if I can reproduce this over the weekend, need to punch in 4000 entries (of course I'll write a script to do that ;-)
If worse comes to worse, you can always use PHPmyadmin to directly download your cforms data.
Its good to know the database will hold 100x that as that may very well be where I wind up.
My last download I had to do exactly that; go to phpadmin and export the datafield; a bit more cumbersome.

Right, but can you filter the data and download parts of it via cforms?
Wait, I'm not sure if the "data filter" feature was already in v5.3…might want to upgrade.
EDIT: just tortured my tracking tables with 15'' + entries. I ran into no problems from a cforms / DB perspective, download and everything else works 100% – HOWEVER, Firefox becomes *really* slow once you make your browser display 15'' + entries…
so the only bottleneck is your web server (and its limitations) and of course your browser.
