Per the feedback so far it seems that the latest Patch Update has fixed the Outlook 2007 rendering issues.
Please do provide further feedback and also check your MTA (mail server) for odd settings that may inject additional code (e.g. CR carriage-returns).
Finally, the patch adds a new option under Global Settings > Mail Server Settings :
CRLF (carriage-return/line-feed) as line separators, for mail server "fine tuning"

I still have the same Problem. I applied the patch, cleared cache and reloaded the page, the mail still shows up the same way in Outlook 2007.
I also tried the option with the CR/LF – does not seem to make a difference.
First MTA is Postfix, receiving MTA is qmail

I too had the same HTML MIME problem after updating from 10.4 to 10.4.1 patch. All of my admin emails were coming in the HTML code and not rendering the HTML.
It was fixed for me by simply checking the CRLF box at:
Global Settings -> Mail Server Settings -> Separate lines in email body with LF only (CR suppressed)
I'm using WP 2.7.1 and latest Apple Mail 3.5 on Leopard 10.5.6.

For some users, there still seems to be an issue with Outlook2007 + their MTA (mail server).
If anyone would like to support the troubleshooting process by testing v10.5 (beta) please let me know.

1.) I just installed the plugin + patch within the past hour.
2.) My email client is Mozilla Thunderbird v 2.0.0.19

I use a previous version on other sites and the email come across properly. When using v 10.4.1 which I just installed, the emails come across as other users have described, I can send you a copy of the email received if you like.
3.) I also tried setting the Separate lines in email body with LF only (CR suppressed) but this didn't help.

Troubleshooting: One other thing about troubleshooting the problem which may help, in my case I run multiple blogs and am still using v 8.7 on other blogs, so I can currently generate the email in the older (correctly formatted) format or the new (not rendering in HTML) format. Let me know if you would like me to generate the emails and forward them…..

hm. this is the first time I hearing about Thunderbird being picky in such a way, which on the other hand could also mean that it is indeed a general MTA (mail server) issue.

Same problem here with emails after upgrading to patch 10.4.1. I receive my mails in Hotmail and Windows Live Mail.
First another problem : I use Cforms to replace comments form. Since 10.4 version, when we post a comment, i receive the strange email, but no comment are added on the database !!
Second Another problem : im french user of Cforms. Since this 10.4 version, all accents like é and è are replaced by strange encoding like é (é) in the confirmation mails.
Thanks to fix this…

Ok, lets see…
With version 10.5 and two CRLF options checked in the settings, all seem to work again. Strange thing, i receive a comment spam again, and the message received have same problem with bad headers. Ok, its just a spam, but this can be append again with some visitors or some browsers?

I found some other tweaky things with version 10.4 + patch: When I CCed a copy of the message (by using the CC form field) it generated a exact copy of the email: BUT THIS COPY RENDERED FINE, the original did not render.
Version 10.5 did indeed fix the problem. I installed it and WHAMO! both emails generated render properly. I have both the separate lines fields checked (LF/CR), which is apparently the default setting.
As I said before my client is Thunderbird 2.0.0.19 and it works fine with 10.5 and 8.7 but does not work with 10.4 + patch.
Thanks for the responsiveness and great plug in.
ONE OTHER question: when is 10.5 going to be fully released (not beta) so I can install it on my other blogs?

Final beta release of v10.5 (B6) available for download/test.
Please note the general upgrade instructions ans safety tips, as well as the 'What's New' section in ____HISTORY.txt
Most importantly: cforms 10.5 *will* require PHP 5
