I want to have all the fields of the form included in the email to myself as well as the client, including the text only (no input) fields. how can I do this?

If you also wanted the text only fields you'd need to either hack the plugin or use custom admin email messages including all the text you want + {variables} referencing the data (and disable the message/data footer option)
