First, I'd like to point out that I plan to upgrade to 11.0 soon, but I don't think my issue is an issue with the version I'm running.

What I'd like to be able to do is mark a field as an email address without making it required.  As in, I'd like the validation to be there and I'd like the benifits of cforms knowing it's an email address without the requirement.  Obviously, when I check the "Email" box next to the field, it marks it as required.  Any ideas?

cforms handles "email fields" as email fields and may send confirmation notes etc. and therefor expects the field to be there. it is a mandatory field when used.

simply use a single line input field instead and call it "email".
