I am not sure whehther this is intended. I have one cforms setup currently, and I find the cform fields data in the blog edit screen (site admin->blogs->edit)

 

where does the field data being saved anyway. I can't imagine if I have 10 forms with 10 fields then the page is populated with those extra cforms value

I'm certainly no authority on WPMU, so I'm not sure how the admin UI differs in places but I've been told that cforms does work nicely with WPMU.

I would think that cforms user defined forms are all kept in the context/tables of a particular blog/user.
