_The admin e-mails are sending fine but when users click the 'CC' option they're just getting a blank e-mail.

Is there a box I should have ticked or something?

just ran a test and it seems that for the CC'ed email there is no HTML message text, the TXT part is OK. if you switch in your email client to text only view, you'll see it.

check your admin email settings for TXT & HTML.

Admin is set to send TXT, rather than HTML. Is there a setting to do likewise for the copy?

CC: should take all settings from the admin configuration. Try with enabling HTML, does that fix the issue? (You can simply copy the TXT part into the HTML part for the sake of the exercise)
