I would like to migrate the form submissions to a new server. We have updated the plugin on the new server and formatted the style of the forms. All we need to do is migrate the old Form Submissions that were being tracked to the new server. Old server is running v11.7.3 and new version is latest v14.5.

Is there a way to backup just the Form Submissions and not the entire backup from Global Settings > Backup/Restore all Settings?

No, form submissions can't be backed up via cforms, you'd have to do this via you standard MYSQL admin tools (both tables).
