Is there any chance to make that part of cForms II as a customizable thing ? What I mean is to give a chance to customize fields, which are used to filter entries (not just who/when/ip, but using fields existing in form).

Absolutely, but frankly, it's not going to happen for a while. Feel free to jump in and I'm happy to take a look at your work.

First, it is {Page} with a capital P otherwise it won't work. If it still doesn't work for your setup you might want to try {Permalink} but you'll have to activate "Extra variables e.g. {Title}" on your form config page.

The page title is only being shown in the "data view", not the summary page for now. So can't sort by page title and then download only those submissions, unless you enhance the code yourself.
Of course you can always download everything and then do the sorting in EXCEL and toss the rest.

not a 100% sure what you mean. the {Page} variable should be tracked both on actual WP pages but also on WP posts (if shown in "single mode").
there has recently been a fix to the {Page} var.
