		<description><![CDATA[I bought ramekins today so that I can start making some little pudding things.

One question:
I don&#039;t like to &#039;waste&#039; food, so what can I do with the egg whites? I&#039;m thinking I could make a &#039;topping&#039; by whipping them so that they are hard and placing them on the lemon pots and then baking for a few minutes until slightly browned up (as per what I do with cheesecake)...any other ideas?]]></description>

And I totally agree, it&#039;s important to skim off the foam, it really does create an unpleasant texture. I made these twice, the first time, I left the foam (and I think even when stirring carefully there&#039;s always foam), the second time though I skimmed it off completely, much better! And I do love the pots as well, so cute!]]></description>
