I made this today and if I only make one flavor of ice cream for the rest of my life, this will be it! Unbelievable!

I think having the right bacon would be key, and I was lucky to use a thick applewood smoked bacon (it's fairly light on the smoke, but really good flavor) and I took out more than half of the back grease before adding the milk and cream. I also used an extra slice of bacon to finish up what I had bought that was just over what the recipe called for.

I used dark brown sugar instead of muscovado. I had the muscovado, but decided that for the particular bacon I was using, the brown sugar would go better.

Wow, wow, wow. Thanks so much for sharing!

Ironically, I made it because it wasn't on the current Humphrey Slocumbe list.

Wait... should the bacon fat be drained from the pieces before adding the milk and cream? I can't imagine that the amount of fat that bacon lets off would result in a successful ice cream, but the recipe sounds like it should be left in the pan.

Approximate Unit Conversion for Jann:
30g = 30 mL = 2 tbsp = 1 ounce = 1/8 cup
200 mL = just over 3/4 cup

(Bote Man: the specific gravity of cream at room temperature is 0.99 so you are right.. you would need 202 mL of cream instead of 200 mL)

Jann: The 'gram' is a measure of mass, so while it seems odd to measure liquids this way, remember that liquids can vary in density. A measured cup of foamy egg whites does not contain as much mass as a cup of water.

Measuring cream by mass ensures that you get the proper amount of fat into your recipe.
