Risotto - is one of the most popular Italian dishes. Its hard to imagine an Italian restaurant, not offering a menu of this rice dish.

Thanks for the recipe! I was just into making a risotto from some leftover ingredients before going on vacation and cleaning out the fridge. So I typed "risotto, chorizo, tomatoes, pepper" in Google and here I am!
Actually the pepper came out much easier than expected (first timer with grilled peppers) and after 10 minutes in fridge the skin came off easily. And I can agree with the previous poster - the spoonfuls without chorizo were as nice as the ones with it.

Again, a great recipe - my first risotto ever and needed to work for guests... perfectly did! I left out the chorizo (vegetarians) but wasn't missing anything flavorwise.
Regarding the peppers, I roasted them as you said and as they came out of the oven, I put a damp kitchen towel right on top of them. That worked just fine for the peeling.
Thanks again for a great recipe!
