hi! this looks delicious and I was looking at your ricotta gnocci recipe and that looks amazing as well! I was wondering.. I have an acorn squash sitting in my house waiting to be used but I haven't been inspired to do anything with it yet. Could I make this recipe with acorn squash instead of pumpkin? Thanks!!

Erin, I never tried it with acorn squash, therefor I cannot give you any recommendations. But if you do, let me know how they worked out!

I love your recipe, yet i keep hearing that you need to add more and more flour.

I have found that once you have cooked the punpkin and the mashed it witha ricer then use a Muslin Cloth to squeeze any excess water from your mixture.

I stated with a 1kg butternut pumpkin.
After cooking and mashing and squeezing it weighed 450g. which was only enough for dinner for two people.

That is a lot of water to loss.

Once i started to mix in the flour i found that i only needed 70g of flour and i ended up with the most beautyful light and fluffy gnocchi i have ever made. I didn't use an egg either.

try it and see what you think...
