Oh dear, I have to be honest I am pretty lazy when it comes to cracking eggs and just crack them all into the same bowl. I've been lucky and have never been caught short, but maybe I should take more care in future :). Great article though.

Only the other day I was making a pavlova and I was just about to add the eggs and I got a smell. I think the rule of breaking eggs into a second plate will be my new rule from now on

Last night, at around 12 o'clock, my friend and I remembered we had to bake cookies for a school cake sale that was taking place. We were tired and annoyed, but it had to be done. So we were in the kitchen and we had the other ingredients we needed for the cookies in a bowl, and it was time for the egg. She had previously commented that something smelt like fish, and then she found a cracked egg amongst the rest, so we assumed it was that.

By this stage, we were so tired and annoyed we'd forgotten to make these cookies, we wanted to get it over with, so I took another egg from the same batch as the cracked one and hurriedly cracked it open into the mixture: it was the worst mistake of my life. I had never before experienced such stench, never mind being so grossed out as to how the damn thing looked. It was so bad that my friend had to run to the toilet to vomit.

I vowed to myself then and there that I will always, no matter what, crack the egg into a separate bowl before adding it to whatever I am cooking.

I seem to remember that to check for a rotten egg BEFORE cracking it open is to place in a bowl of water. If it floats it is most likely rotten as rotten gases have built up inside the egg.
