Hi, I realize this is an old entry, but very few people seem to include chicory in their cooking (except for salads). What a shame! I grew up eating it and my mom has arecipe that is (especially for the males in the family) a total winner. One is chicory wrapped up in cooked ham (a good, juicy one or otherwise it will turn awfully dry), fried in butter, than braised in water that comes up to half of the chicory, a pinch of sugar added to take a bit of the bitterness. It is braised until soft (lid on), then the water is reduced, cream is added, some Worcestershire sauce, salt (if needed), some more sugar (to taste), thickener. Served with potatoes. I always have to make liters of sauce, because my boyfriend and I love to mash up the potatoes with it. It's sooooooo good! I know it's a rather heavy dish, but if you liked the bacon chicory combination you should give it a try.
By the way, your blog is wonderful, pure eye candy :o)
Cheers

What a wonderfull idea to make chicory! Sounds so tasty that I'll try this out the next time I spot them at the supermarket. I've made them together with noodles. Great when you're surrounded by vegetarians and not sure what to cook ;-) Spaghetti with radicicchio PS: Great pictures, makes you want to bite in them.

Chicory is delicious simply grilled with oil and a splash of tabasco. Even better is red chicory, otherwise known by its Italian name radicchio di Treviso.
