Just wanted to note that the espresso jelly you add will greatly determine how the flavor and taste turns up. I once had this amazing dripped coffee in Hanoi city of Vietnam and I couldn't figure out what they added to the drink. So I asked and turned out the unique light sweetness and aroma of peach was from the fresh fruit jelly added to the espresso shot.

Hi, I'm hoping someone can help me. I've tried making this at home and the taste is prefect but the texture is not chewy enough. Can anyone recommend how I can make it chewy? EDIT Nicky: Hi Cathee, I'd suggest adding more Gelatin, but am not sure, if I'd recommend it - might turn out quite rubbery.
