As the previous title Outtakes: Savory Dishes suggested, here’s a variety of sweet dishes which have not ended up on the blog:

Fig Tart
Although an eye catcher, still a category A dish, which I had baked with a left over pastry crust…the combination wasn’t too compelling, mostly due to the rather crumbly pastry.

Melon Granita
Another type A experience, the melon taste was not up to par with the nice color of the granita.

Rhubarb Cake
Turned out pretty good – revisiting the images recently, I couldn’t for my life recall the recipe for the batter/dough. Also, it would probably look nicer with pink rhubarb which isn’t always easy to find. Category B.

Ice Cream
Very yummy and fun to eat – a type B – recipe lost (can’t believe this happened, need to look more).

Blueberry Cake
Definitely a hit – unfortunately another one-hit-wonder?! Again, I haven’t written down a word, neither what batter I used, nor what kind of custard-like topping I poured over it. So sad about this B…

Physalis
This really doesn’t qualify for neither A nor B, it’s one of my favorite sweet decorations. Physalis dipped into various kinds of melted chocolate and – if desired – in chopped/shredded pistachios or coconuts. Also perfect as a sweet snack.

Meringue
This meringue looked a lot better before they went in the oven, they turned slightly brown and therefore wouldn’t qualify for perfectly white meringues… hm, an A!

Mutzenmandel
Those little delicacies developed out of leftover yeast dough. Similar shaped ones can be found in Germany, which originally are more crisp than mine turned out, I also didn’t use any almonds (which are rather essential). A mixture between A and B.

Shake
Shakes I usually make out of various readily available fruits – so none tastes the same. B.

Datschi
I’ve been trying to recreate my Grandma’s Datschi (regional kind of plum-cake) for ages, as I don’t have her recipe for the dough. This one didn’t even come close, I’ve prepared better ones in the past. So the search continues… A.
PS: We’ll be on holiday until early October, with limited if at all online access; hence delicious:days won’t be updated per our normal schedule…
Geez, I wish my photos were as beautiful as your outtakes.
cheers,
Pim
I should love the receipt -- especially for the fig tart and the blueberry and rhubarb cakes. Might you please email them? Thank you ever so much (from Florida -- but I condider myself a biploar person in that I grew up in Boston and lived in NYC after College for 15 years until this January )
Nicky, that fig tart looks fantastic. I don't care about the crumbly pastry; I have other pastry recipes I can use. Did you just put sliced figs on top and some thick clear sugar sauce on top to keep from drying out?
The plum cake looks like one my gramma always used to make! Hers was an unsweetened yeast dough, with plums laid out on top. It was baked, and when it was still hot out of the oven, superfine sugar was sprinkled all over it. So delicious! I'll have to ask her for her recipe. :) We just call it "Pflaumekuchen." (I got the spelling from Babelfish, as I don't know much German.)
Waouhhhhhhhhhhhhhh
I don't speak very well in English but just one word for yours photos :
SPLENDID !!!
Continue again and again (i'm not sure i can tell taht but...)
Bbye
Wow, I just found your blog today. Your photos are phenomenal. I still have so much to learn about food photography!
Hey Nicky,
WOW! I could surely do with a Melon Granita right now! Love your Fig tart as well.....superb job as usual!
No suprise that all these photos are amazing! In an effort not to lose any spur-of-the-moment recipes myself, I now keep a half dozen notepads scattered about my kitchen. Those recipes are always trying to escape.
Indeed, the photographs are gems. You might to give some of us a tutorial in that skill alone.
A little trick with pale rhubarb is to color it with a bit of beetroot juice. It lends no taste, but give a bit of a blush when there isn't one...
*** We’re back ***
Hi Luisa, Thank you. For the Datschi I will continue to look for the right dough, once found I will give it due attention on the blog!
Hi Pim, Thanks for visiting and your kind feedback :)
Hi Jonathan, I’m sure I will make those cakes soon again (if the fruits are available) and will then have the diligence to document the recipe and post them…
Hello Ana, yes, just sliced the figs, and for the shiny glaze, I used some jam I had at hand (plum this time), heated it a bit, so it became rather runny and easy to glaze the tart with.
Hi kris, Sounds like these our two plum cakes could have the same roots. I’d be delighted if you would share the recipe with me…
Hi Clochette, Beth, skrat, shuna, Thank you for stopping by and your kind words. And thanks for the tip with the beetroot! I have actually never used it before (neither juice nor beetroot itself).
Hi Nic, Just brought back a new notepad with a magnetic back from our trip, so now I can conveniently have it available at all times…
The photos are fantastic, it makes to food look impecable. Without your comments we would never know how the sweet things really turned out, I keep looking for recipies but have nto seen any.

Your photos are simply stunning. What's your secret????
I had my first Physalis experience this summer in Freiburg. Those little cuties fast became one of my sisters favorites when she moved there. My heart too holds a special place for them. Unfortunately I haven't seen them anywhere in seattle. I guess they will have to be a special treat to mark my visits to Germany! Libby will LOVE dipping them in chocolate.
Your photos and recipes are amazing I'm glad I found you, have added you to my RSS reader!
I don't think I've ever commented here, but I love your photos and your blog! In fact, I think it might be the prettiest thing I've seen all day. Your outtakes are enjoyable as well. Thanks for a good read.
