We have an incredible over-abundance of large tomatoes this year, although, for the first time in years, the cherry tomatoes didn’t do well. When we dry the big ones, we slice them about a quarter of an inch thick and then put them directly on the silicone pads we use for the oven (on cookie sheets) and put a little salt and dried basil on them. It takes much less time at 200 degrees – and the easy thing to do is to set the oven for 200 for one hour and then just leave the oven shut and let the residual heat do the drying. Lots less electricity and if you need a little more time on the tomatoes, that’s no big thing.

What we do with the dried tomatoes, by the way, is put them in plastic bags or containers and freeze them. They keep all winter and you can use them when you feel like it for the rest of the year, until you have tomatoes again.

By the way, this works with zucchini, too!

I made dried tomatoes in a dehydrator for the first time and bottled them in olive oil. When I came to use them they were bubbling! I guess they've gone off. Does anyone have any tips for me or had the same problem? Thanks

instead of reading a site that is not reliable concerning the "poisonous parts" of the tomato plant, please refer to this site : http://www.ces.ncsu.edu/depts/hort/consumer/poison/Lycopes.htm by North Calorina University.
